A NATIVE CHICKEN TINOLA

A Native Chicken Tinola is one of my favorite Filipino cuisine. This is to share the ingredients and preparation in cooking a Native Chicken Tinola. The ingredients is composed of one (1) whole native chicken, sotanghon noodles, sayote (or papaya and other vegetables suitable to it), ginger (luya), vetsin (or chicken cube), salt and water.


The secret of a delicious Native Chicken Tinola is the ingredients that will be use and the desire of cooking upon it. After successfully have prepared the ingredients, frying the meat of native chicken (sliced into pieces) is the first step in cooking it. Wait until the meat native chicken is in light brownish color to make the meat soften and to produce with a natural chicken oil. Then add water suitable to it as a soup for the cuisine. Mix other ingredients such as salt, vetsin (or chicken cubes) and sotanghon noodles and wait until it will boil. Upon boiling pour out the sayote or papaya and wait until it is now cooked and ready to prepare for a delicious Native Chicken Tinola meal.

In fact, this cuisine is a soup and for me it is a delicious cuisine. An old school recipe that I am craving for it.
